Maps and extensions built on top of it have support for multiple mapping services (see display map). Some of them have restricted licences, others are completely open source. You can take out mapping services you don't need by removing their inclusion from your settings file. Once you have done this, you can delete their complete directory (which should look like
Maps/includes/services/MappingServiceName/) without any problems.
